Biscuits de Noël au Thé noir N°25

Ingredients

  • 15 g Organic Black tea N°25
  • 65 g unsalted butter
  • 125 g flour
  • 35 g brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 pinch of ground ginger
  • 1 pinch of ground nutmeg
  • 1 pinch of salt
  • 1 sachet vanilla sugar (or 1/2 teaspoon of liquid vanilla extract)
  • 2 teaspoons honey

Instructions

  • Preheat the oven to 200°C.
  • Create the tea-infused brown butter: add the butter to a saucepan and melt it over a gentle heat until it turns brown and starts to smell slightly caramelised. Turn off the heat and infuse 5 g of Black tea No.25 in the brown butter for 10 minutes.
  • Separately, infuse 5 g of Black tea No.25 in 10 cl of water heated to 90°C for 10 minutes. Strain and put aside.
  • Grind the remaining 5 g of loose leaf Black tea No.25, and put this powder in a mixing bowl. Add all the other ingredients and mix.
  • Pour in the honey, the strained brown butter and half of the infused tea. Knead; the dough should be pliable and almost crumbly. Add some flour if the dough is too sticky, and a dash of infused tea if it seems too dry.
  • Roll out the dough, and cut with the biscuit cutter of your choice.
  • Bake for 20 minutes until the biscuits are golden around the edges.
